We’ve started to get serious about meal planning.
I’ve been trying to start planning for the next week on Wednesday.
One of our meals was this delicious all-in-one pot of BBQ chicken, pasta and cheese.
It. Was. Delicious! And it makes about six servings worth, so I’ve been enjoying it for my lunches ever since.
After I posted a picture on Instagram & facebook, I had a few people ask me for the recipe.
I hope y’all enjoy as much as we did!
You will need:
– A nice deep pot
– 4 slices of bacon ( or more if you like..c’mon it’s bacon!)
-1 boneless/ skinless chicken breast
-3 garlic cloves diced
-1 onion diced ( keep it in the fridge before cutting to spare your eyes!)
– 1 fresh red juicy tomato diced
– 3 cups of chicken broth
– 1 1/2 cups BBQ sauce of your choice ( we use Rudy’s Sause)
– 4 cups of Rotini pasta
– Salt & Pepper to taste
– 1/4 tsp Red Pepper flakes
– 1cup shredded cheese
– 1/2 cup milk
Dice up your bacon and toss them in to your pan! Mmm…. bacon.
Cook your bacon until it’s brown. Do not drain the bacon fat.
Dice up your chicken breast while the bacon is cooking, stir the chicken pieces in with the bacon and cook until the chicken is golden. :: about 3 minutes::
While your chicken is cooking, dice up your garlic cloves & onions. Throw those bad boys in the pot and stir it up a bit for about 3-4 minutes. Gently pour your chicken broth in to the pot, toss in your tomato, salt and pepper,milk,red pepper and pasta. Stir a bit more.
Bring your pot of amazing ness to a boil ; cover and reduce the heat to a simmer while the pasta cooks through. About 15 minutes.
Once your pasta has cooked through, pour in your BBQ sauce and add your cheese. Stir. Let stand for about 2 minutes
It will be hard to not eat this straight from the pot! However, you should probably serve this on a plate and throw a little more cheese on top.
